Jackson's 2nd Birthday!

Jackson turned two years old on Saturday! What is a mother to do!? The celebration took place at Lake Brownwood...we just happened to be there for a family reunion...so fun! Anway, I know you are all wondering what the big ring on his forehead is...well, Saturday morning he was running around chasing cousins and trying to keep up with Moriah (three year old cousin)...and he totally wiped out! I'm not sure what parts of his body hit first or whatever...I didn't see it happen...but boy did I hear it happen! So scary...I turned and found him sitting on the concrete, holding his head...my poor baby...not-so-happy birthday...

The rest of the weekend was great though...Jackson loved swimming in the lake, he is fearless...we took him out for a slow boat ride, and he almost fell asleep...all in all it was a fun weekend!

Hey, did you make the cake? I saw a cake in a magazine that was a bunch of cupcakes put together and iced to look like a sheet cake. I thought that would be good for Elijah's birthday party, but didn't know if it could be done without using fondant (I know that's spelled wrong) icing because it seems like the icing would fall through the cracks. Email me and let me know how you did it.

Erica,
I tried to email you at the address you left, but it bounced back to me...sorry

Yes, I did make the cake, and the angle I shot the pic from actually makes it look like I did a great job...but don't be fooled! I am so not a cake decorator!:)

Anyway, I didn't have a problem with the icing falling in the cracks. I used whipped icing, so I might suggest using regular icing that is thicker. I pushed the cupcakes as close together as possible before icing it. It really was wonderful being able to just pull away one cupcake at a time, that was nice, and different. It was fun, and I definately think I'll be doind this kind of cake again for other things. Good luck, I'm sure your's will be much better...send me a pic once you do it!
